Honey color and flavor depend entirely on what the bees forage. Our Apiary2 bees in Clayton have access to different wildflower and plant sources than our other apiaries — including buckwheat, which contributes to the darker amber color and richer, more complex flavor. Dark honeys are also known to contain higher levels of antioxidants. Every season produces a slightly different harvest, so no two years taste exactly the same.
